The best part of learning a new language is learning about the culture and the food that go along with it! These recipes are from Mwalimu Auma, my first and best Swahili teacher.
Mchuzi wa Kuku / Chicken Stew
One package chicken thighs
One 14-oz can stewed or diced tomatoes
One can coconut milk
One big onion
2 cloves garlic
One can coconut milk
2 tablespoons curry powder
1/2 small can tomato paste
Saute the onion and garlic together, then add curry powder. Place the onions and garlic along with the rest of the ingredients in a big stew pot and simmer for an hour. Salt and pepper to taste.
Wali wa Nazi / Coconut Rice
2 cups basmati rice
1 cup water
1 can coconut milk
Simmer together for 15 minutes or 'till rice is tender. Cooks quickly!
